A lively and enticing wild ferment Sauvignon Blanc made with minimal intervention and showing all the hallmarks of this variety.
Tasting Note A lively, enticing Sauvignon Blanc showcasing the signature aromas and palate of the variety - lemongrass, passionfruit and a touch of fresh rosemary. The palate is fresh and full flavoured with a creamy mid-palate is complemented by a long, lingering finish with zesty lemon rind acidity; a wine that is best consumed in its youth.
Treatment This wine is made using 100% wild fermentation. This means only the wild yeasts present in the vineyard and on the grapes ferment the wine, providing luscious fruit flavours and an individual mouthfeel.
Best Enjoyed With Barramundi or Thai green curry.
